Devo's Czech Pilsner

Pilsner - Bohemian Pilsner
All Grain

Brewer's Notes

Ferment at 10c then once SG hits 1.020 raise to and rest at 20c for 48hrs. Chill back down 10c and rack to secondary fermenter for another 10 days. Once gravity hit anywhere b/w 1.008 and 1.012 transfer beer to kegs and let condition for 4 to 6 weeks before tapping.
I'm currently using wyeast 2000 Urquell but couldn'y find it listed on the AHB database list. 2008 Batch.
Pitched yeast @ 20c on 22/11/08
1st reading of 1.040
2nd reading of 1.025 on the 30/11/08.
3rd reading of 1.020 on the 02/12/08 and raised temp to 19c for diacetyl rest.
4th reading of 1.012 on the 04/12/08 and began chilling back down to 10c.
5th reading of 1.008 on the 11/12/08.
Kegged to 2 x 19lt cornies and bottled the rest. Will condition for 4 to 6 weeks before tapping.

I want to give this a crack very soon as I am getting into Pils and lagers ATM. Just wondering what mash schedule you used? I am guessing 63C for a lighter body?

I tried this Pilsner on Saturday and I would rate it as the best Pilsner i have tasted.

After tasting it i lost a couple of wrinkles :icon_cheers:

Cheers rook. I really enjoyed this particular batch. Nailing the fermenting temp probably got it across the line.
