But just out of curiosity, I am reading all of these recipes and there is no mention of how much water I need to start.

Am I missing something? Is the amount of water a ratio to how much grain is added?

All depends on how you brew - esky, sparge, BIAB etc. Download Brewmate - its free and it will get you on the right track.
 
Your brewing software should be able to work this out for you (if you are using software)

I've just been going off practice more than anything of late.

2.5L/kg mash in, top up for mash out with boiling water up to 75, drain, then sparge with ~90'C (the boiling water that was used for mash out that has been sitting there) water depending upon how much more wort I need in the kettle for pre-boil volume.
