From memory its 3 beans and 2 cinamon sticks and 22L juice. I dont reme how much sugar but I vaguely remember it was over 6% so youll need 1kg sugar. From memory boing used white sugar in this.
 
Really thinking about giving this a crack.

  • is it better at 5.5%ABV or 11%ABV being a cider?
  • And is plain Dextrose better or just plain white sugar?

Im wondering if the champaine yeast help keep unwanted flavours down at 11%ABV or is it like other yeast and the higher you go the worst it taste? Ive distilled a lot in the past and high ABV washes have me sceptical when not distilled and had heads/tails cut but i have no experience with champaine yeast or cider, as it is im a newbie to beer also.
