Brilliant Ale

Brewer's Notes

This is how I brew it... Not the way you have to make it...

Mash @ 55C x 120 mins + 72C x 10 mins

Used a spare fermenter with tap/sediment reducer as a 'spanger'
I Put grain bags into it at the end of protein rest, poured wort on top & Let sit for 15 mins before drawing off 3L at a time, & passed back over grains.

Only use Extracts for the boil, adding the fresh wort & 5L of spange water (77C) throughout the boil (at 60/50/40/30/20mins)
Sounds really complicated but it has streamlined my brewing.
I get plenty of fresh malt flavour in the finished product by doing this too.

Add Saaz B @ flameout + 6 days (rack)Pitched at 22C & fermented at

18C for 6 days then raised to 21C for 5 days.
Cold conditioning for 2 weeks then carbonate to taste.

I really like this one...Not sure if it's a Blonde ale or Cream ale or what? But it's brilliant!
It took 1st place in Hybrid & Low ABV category at 2009 Manjimup Cherry Festival
