Brewer's Notes

Pour LME into a prepared fermentor and mash the grains in several litres of water at your preferred temperature, or 67'C. Failing this, bring the mash to a simmer as slowly as possible and then let sit for 30 minutes. Sparge and use resulting liquor to boil the 20g Saaz addition for 20 minutes. Pour into fermentor and swirl to dissolve LME. Top with water to 22L, allowing for yeast pitching. Bring to pitching temp and pitch yeast. If not using liquid yeast, use a quality dried yeast such as S-189. Allow fermentation to proceed as usual and add 10g dry Saaz when 7 days from bottling. This will vary depending which yeast and what temperature is used.

NOTE: The 1.7kg LME and 20g Pride of Ringwood additions represent a commercial pilsner kit. I recommend you use your own bittering regime to the equivalent IBU's, or obtain a good commercial pilsner kit.
