Recipe ideas for Coopers Dark Ale

Hate to reveal my ignorance, but what exactly is DDME?
And where is the rest of the fermentable material in the choc stout "recipe"?

LDME =Light Dry Malt Extract
ADME =Amber Dry Malt Extract
DDME =Dark Dry Malt Extect

the other fermentables in the Choc Stout would be the can of coopers Dark Ale

IMO the Coopers dark ale stands well just on its own even with plain old Dex you really cant lose
