Well I had another go and have managed to get a great pilsner - clear, target OG and FG reached.

For those of you trying to brew pilsner keep going.

I adjusted my sparge technique a little, changed the yeast, only lagered for 10 days.

Success.

Good job mate.
Hard to nail pilsners and lagers, most just go onto hopping the shit out of beers to mask errors.
 
Thanks. I think the only minor issue is I think I'd slightly increase the bitterness hop level next time. I mainly brewed it for my wife who doesn't like bitterness at all.
 
I have only done 2 lagers and both turned out really well for me, it I concur that dialing in the bitterness and hop character can be hard, IME you can lose a bit of the desired bitter edge with extended lagering

Your 35 IBU pale ale hop schedule might not translate into a lager recipe without adjustment.
