Some Cara-Pils wouldn't go astray in that recipe, around 250 grams. Also mash at around 64-65C for a nice dry finish.

That is all I would change, the hopping schedule looks great Andrew, should add some character.
Good luck

TDA, I've run out of cara-pils, do you think 200 g of wheat malt would be too out of style. I wasn't too concerned about the cara-pils because I thought with all that hops the head would be pretty good anyway.
thanks
Andrew

wheat malt good for head retention i do use often in my mashes and cara pils would be good im using it now with my lagers

you crack me up Jaz! Me need meat, me want woman!!

Just joking mate.

Why not add the wheat but maybe only 100grams as you said the hops should help.

I was wondering the other day, Goliath HBS has crystal wheat, could we use this for both body and head retention, any ideas?

Crystal wheat would be out of place in a pils, being quite brown and adding quite a bit of color to the beer

250g wheat malt will be fine

Czech Pils use all Saaz hops, German Pils mostly use Hallertau, but mix them if you like
A single decoction would be nice with that

Thanks for the replies, am going to add 200g wheat malt for the head and plan to leave the hops schedule as is. Will ferment at 11c until done then raise to 20c for a diacetyl rest for 2 days, rack and cc for 2 weeks in secondary, then keg and lager for 4wks, just in time for my 40th. Wish me luck as this the the first pilsner I have made and really want it to be a winner.

Hi Andrew,

Sounds like "Pilsner begins at 40" :D
