G'day all, was just steeping my grains for a brew which I have done many times before when I got distracted[Iaan's spread sheet] and forgot I still had the burner on,when the penny droped and I got back to the stove to turn it off the temp had risen to 95*c I quickly removed the pot and sat it in a tub of cold water to drop temp as fast as possable,it was prob at high temp for about 5mins, as others have said steeping above 70* can produce unwanted tannins,my ? is what are these tannins and their flavours as the wort smells/tastes ok or do they appear during fermentation,I dont want to dump it unless it's gunna turn out like its been put through a crappy nappy :icon_vomit:
