Oktoberfest Ag Brew ( No Vienna )?

Hi guys,

Have decided to give an Oktoberfest brew a go, I am looking for a good recipe and one that I can sub out the Vienna ( cos I don't have any at the moment)
Grain I have are;

Pilsner
Munich I
Munich II
Chocolate
Roasted barley
Caramalt
Caramunich II
Med. Crystal
Wheat

Any suggestions... Probably use a saflager yeast?
 
Either of the Munich malts would be fine, I think Munich ii will be a little darker than Vienna.

I would have thought subbing the pilsner for the vienna would have been a better option? Only made one Oktoberfest so I am far from being an expert on the style. I just think the Munich I or II as a base malt would be too cloying to the finished beer. Happy to be corrected.

I'd sub the light Munich for Vienna in your recipe and maybe balance with a bit more pils or cut down any dark specialty malts depending on the estimated colour.

Has anyone got any ideas on hop type And schedule, I assume hersbrucker and tettnang maybe?
Mash low at say 66c for 75min?
 
Noble German hops (or equivalent) of your choice, with a single bittering addition to approx 25IBU would be to style for this beer.
