currently coming up to boil and looking at OG post boil 1.068-70

mash was high at 68.4c over shoot recipe called for 67.5

planned on using S-04 , calcs show based on 75% an FG of 1.016-17

will this finish to high and be cloying?

Make sure your S-04 is healthy and preferable is in the form of 2 x packs
 
I like to start my S04 in a couple of litres of wort, it always finishes well with a good start, it might well make 1.017 but as a stout I would like it to be thick and on the sweeter side.

Maybe. As mentioned make sure you look after that yeast so its healthy and strong or it can do its habit of finishing at 1.020.
 
only 6 days in but looks to have stalled at 1.023
raised temp to 20c see what happens
i pitched two packs re hydrated
