Hi guys,

It's been a while (been busy running for local council. There is always next time).

I am looking to reproduce that citrusy wheat beer tang that I used to get before my pallet got used to GOOD BEER.

I used to LOVE the Naked Ale from Young & Jacksons or Redback, but now find too much Banana on the pallet.

I was wondering if a Grain Bill of Raw Wheat with some Acidulated Wheat would deliver a clean taste, or would I be looking to go down the path of a sour mash?
 
I should just point out that I realise the Banana anf Clove come from the yeast, and that I would probably use US05.
 
An American wheat beer recipe is what you might be looking for...
