Just finished bottling 18Liters of Stone and Wood Pacific Ale recipe by Snow.

Well my version of it reads :-
Grain Bill ----------------
2.300 kg Pilsner (58.97%)
1.500 kg Wheat Malt (38.46%)
0.100 kg Dextrose (2.56%)
Hop Bill ----------------
5.0 g Galaxy Leaf (11.5% Alpha) @ 60 Minutes (First Wort) (0.4 g/L)
10.0 g Galaxy Leaf (11.5% Alpha) @ 20 Minutes (Boil) (0.8 g/L)
10.0 g Galaxy Leaf (11.5% Alpha) @ 5 Minutes (Boil) (0.8 g/L)
35.0 g Galaxy Leaf (11.5% Alpha) @ 0 Minutes (Aroma) (1.9 g/L)
40.0 g Galaxy Leaf (11.5% Alpha) @ 10 Days (Dry Hop) (1.7 g/L)


Misc Bill ----------------
0.5 g Whirlfloc Tablet @ 10 Minutes (Boil)
Single step Infusion at 66C for 60 Minutes.

Fermented at 17C with Wyeast 2112 - California Lager

tasting out of fermenter is very much the galaxy hops flavour and aroma. My wife was drinking
half a glass already :D
I actually used pilsner as when I visited the blokes at S&W they use only the german pilsner as aussie malts are just
too harsh tasting.
Anywho I was interested to see how the 2112 Cali lager yeast went, seems very clean so going to
use it with a Coopers canadian blonde partial this weekend.

Wey Pils makes a superior beer. People underestimate the impact of their base malts. My Amarillo APA done with Wey base is soooo much better than with Barrett Burston. They're different beers.

I like the way you gradually increase the Galaxy later and later.

EDIT: Wey wheat malt is MUCH better also for german wheats IMO.
