If you are going down the path of big og beers, it is better to use a beer yeast first up. The correct yeast will give the correct character.

If the sg is finishing too high, and you want it lower, then pitch the wine yeast. Wine yeasts give a winey character, which will be decreased by pitching it near the end rather than at the start.
