I've seen it done here in the States. For stove-top BIABers It seems to be a natural.
I haven't a clue about protein rests and things like that. An oven is fantastic at maintaining a constant temp. Put your bits in a pot up to temp with a tight sealing lid and you are done. If you want to be thorough, stir once in a while.
An oven temp thermo is pretty critical if your oven only goes down to 100C. You need to crack your oven door accordingly and insulate the bottom of your pot
