I have just acquired some Simcoe, Centennial and Mosaic Hops.

As I just brew my usual house ales I thought I would ask the wider audience for some recipes that include these 3 hops.

For your troubles I will shoot you a couple of tallies of either a Wheat or Golden Ale from my stash, there can only be one winner though!

I could probably trawl through the web and recipe section but

Make your normal house ale plus a kg of base malt add half of the hops at 0min, the other half as a dry hop after ferment.

Go 100% of Vienna malt, use a neutral yeast, ferment cool, Mosaic at 60/10/0 to hit 35 IBU. Will show clean & clear malt & hop character.
 
85% Pale malt, 10 % wheat, 5% Crystal 50 to about 1.050

First wort hop the Centennial for 10 IBU. 10 IBU from equal parts Moasaic and Simcoe at 10min, 10 Ibu from Mosaic at whirlpool (your brew program will need to include a hop stand calc but about 40-50g would likely do in a 23L batch). 2g/L simcoe dry hop at day 7.

Use a clean ale yeast- 1272 is my favourite but US05 etc would be fine.
