Hiya all,
I am making a hefeweizen, i got a smack pack of the wyeast 3068.
i made up a starter as per Batz post, Smacked it, next day all swollen, pitched that into 1.5L water and Dry malt
it bubbled away, i then stepped it up last night with another 1.5L and 160g dry malt.
This is now sitting there bubbling with a nce big foamy krausen.

Now is where i am a bit unsure, my recipe calls for a 1l starter and i also want to save some yeast for future batches.

do i just stir/ shake up this 3l of malt/water/yeast, and use 1l for my yeast? and then bottle the rest and fridge it? or do i need to separate the sludgy white layer at the bottom when it settles?

Thanks very much

Mick

You could..

A ) Drain off the liquid and pitch the yeast slurry

B ) Stir it up and pitch half and put the rest in the fridge

C ) Pitch the lot the draw out 2-3ltrs from the ferm tap when its at full krausen

Or, drain off the liquid, pitch half of the slurry, and keep the other half for later.
