Coopers Pale Ale ( I have used Coopers lager too)

1 kg Brew enhancer ,

finished with 12 g Hersbrucker hops ( why hersrucker , because I had them) steeped in 250g boiling water

one lemon myrtle leaf per 475 ml bottle , (fiddle for different size bottles)

KISS , but it works for me
 
Sounds a bit like the Spruce beer we used to make in the North of England when you couldn't get hops. Bruise a bunch of spruce 'needles' and add to fermenter. When I was really wee just after World War 2 (Newcastle on Tyne) a local off licence = bottlo used to deliver five gallon stone jugs (returnable) and you could get rough cider, hop bitters (a sort of hop sarsaparilla but not alcoholic) and spruce beer. Got p**sed for the first time when I was 8 sneaking glasses of Dad's spruce beer in the garage. B)


I'm hopeless with Australian trees, how about posting a pic of the tree and leaves? I'm into making ginger beer and some oz foliage might go well.

tree is not unlike a gum tree only smaller

leaves are like gum leaves and when you crush them in your hand they smell like lemons

also make a nice lemoncello


Lemon Myrtle Liqueur

Pick 30 grams lemon myrtle leaves (no stalks)

Wash in cold water

Add 400 ml vodka

Leave for 1 week , no more , to steep

Filter thru a fine sieve

Dissolve 200 grams sugar in 400 ml water and boil
Allow to cool

Mix with the lemon myrtle vodka and bottle

Makes about 1 litre
