Just finished making up my latest and last kit brew. I'm getting a larger pot tomorrow, and expect/intend to do extract recipes henceforth - or is it forthwith? :huh:

Anyway this weighed in at 1061. I rehydrated a Muntons dry yeast. Hope it's tough enough. :angry:

I'm not too worried. Used this yeast a couple of times already, with OG's around 1046, and got a lovely big head of foam. Looked like a big sponge cake floating on top.
 
Took 24 hrs before it started bubbling - that was Saturday afternoon. Sunday morning it had stopped, and the foam was starting to break down.

Friday at pitching 20C. SG 1061.
Saturday 19C
Sunday 18C. SG 1034. Turned on the lamp. (25W globe under fermenter)
Today 18C. SG 1028

Perhaps it isn't properly sealed. Should use grease.

Mmmmm. Tastes like beer. Damn bitter. Wait'll it gets some Cascades into it.

Just thinkin' out loud gang.
