Guys,

Thought I'd give a Kolsch a go on the weekend, something a bit different.

Anyone got a recipe they can recommend (non-mash, all malt)?

Its really hard to do a koelsch without a mash however I do have quite a good extract recipe. Here goes:

250g German Light Munich extract
2kg Muntons Dry Extra Light
.5kg Muntons Dry Wheat
30g Tettnanger (Pellets, 4 %AA) boiled 60 minutes.
15g Tettnanger (Pellets, 4 %AA) boiled 15 minutes.
15g Tettnanger (Pellets, 4 %AA) boiled 5 minutes.

The yeast is the MOST important thing for this style. Must use a Kolesch yeast or a German alt at least

Hmmm, sounds quite interesting. The HB guy tells me its very hard to buy Dry Wheat Malt in Australia. He said they use to stock it years ago but it has a very short shelf life and he just didn't move enough of it.

I suppose it's probably ok to use liquid wheat right?

Of course I have just read this post 15mins AFTER coming back from the Homebrew store. Oh well. I'm going to do an IPA and Porter over the weekend, but maybe I'll make the Kolsch next time.

Weird. We've got Muntons dried wheat available here in WA no problem. I've used it several times.

I'm suprised nowhere over there stocks it. If you have big troubles finding it you could order some from west brew (www.westbrew.com.au) .. I dont shop there much anymore but I know they stock it.

I'll probably have no problem getting it in Sydney, but I'll keep Westbrew in mind.

I think its just my shop. It's a pretty small concern, lols of Kits and a few expensive grains, but its the only one in the area.
