I have a gravity reading of about 1.010 based on the refractometre reading of about 2.5.
Bubbling is very slow (1 per min) and I am keen to bottle now as very busy rest of week.
How much further could it possibly drop and is there any chance that my bottles (500ml German Wheatbeer) explode?
 
What was the OG? How long's it been fermenting? What yeast did you use? Have you taken any readings before this? :unsure:
 
OG of 1.020
Fermented for 6 days with Dry Yeast (weistephaner? w47/70 or the like) ferment stuck so added dry envyme and another satchet of dry yeast(can't remember what...was to be for a leffe blonde style beer)
has been another 4 days.
 
Before you go any further, go read the airlocked thread about refractometers.

At the start of ferment, 1 brix = 4 sg points

Once fermentation is underway, this is no longer valid. Use correction charts or use software such as beersmith and promash. Untill you become familiar with a refractometer, do both a hydrometer reading and refractometer reading. At the end of fermentation, a brix reading of 2.5 DOES NOT CORRELATE TO HYDROMETER READING 1.010.

Airlock movement is not to be used to judge whether a beer is ready to bottle. SG must be stable for 2-3 days by either repeated refractometer readings and/or hydrometer readings, not by counting bloops per second. After all your additions, you want a stable reading over 4 days.

Double check your records for the OG.
 
Everyone is going to be busy over the next few days. Your beer should be fine for an extra week in the fermenter. No-one can say if your bottles will explode or not.
