Hello Mick,

For what it's worth, I'm not sure you'll taste the Munich in that grist. For me, I can't go past 94% pale malt (usually Maris otter), 3.5% roast barley and 2.5% caraAroma for an Irish red ale - the roast barley gives a lovely red hue. Hops wise - I've never added anything other than a single bittering addition. I'm not particularly fussed on brewing to style, but for my mind this is not the sort of beer for late hopping. 25-30 IBUs at 60 mins of something neutral/englishy should be fine. WY1084 (or its White Labs equivalent) is a great yeast for an Irish red. Hope this helps.

My Irish red goes 91% Marris, 3% each Roasted Barley, Crystal 120 and Crystal 40. 58g East Kent Goldings at 60. Like AJ said, don't believe the style benefits from late hops. I use S-05 yeast for this one.

For your 38L brew that would be 8.395kg Marris and 280g each of the others based on 70% mash efficiency..
