Hi All,

A recipe I am about to try calls for Invert Cane Sugar, anyone know where I can get this or if it is something I can make?
Also, Corn Sugar, any ideas where I might acquire this stuff?

invert sugar is just a mixture of glucose and fructose.


it is commonly made from the enzymatic degradation of corn starch and produces a syrup of higher sweetness than a sucrose syrup. it is commonly about 45% fructose. fructose has a higher percirved sweetness than both glucose and fructose.

both sugars a highly fermentable by yeast.



i know this cos i had to do an assignment on it last semester.
