Makes no difference to me, I'm just sick of steeling my one and only from the fermenting fridge come brew day.

The one with the detachable probe would be my preference for when I inadvertently break the probe!

I like the simplicity of ITC-308 standard with no plug to affect readings. Yet also like the ability to change-out a faulty sensor so no useful opinion.

ITC-308 Wifi would be great for me. Would save me going down to my shed to make sure the temp alarm is not going off and I could check my phone to see when the strike water in my brew kettle was as the right temp.
I currently only have the standard ITC-308.
(which is still great)

I second the pain of moving my device from my fermentation fridge when brewing.

Nice one I will would use the Inkbird Pre-wired Temp Controller Thermostat ITC-308S with Removable NTC Sensor.

I think the removable sensor would be ideal. Count Me in.
