Hop replacement for Dark IPA

I am looking at doing a dark IPA but have no hops listed in this recipe. Still consider myself a newbie to brewing so dont have a lot of exp with matching hops.

I have amarillo, cascasde, citra, mosiac anf galaxy.

I am just wondering which would suit the brew best or do I need to find a hops with higher alpha %

The Wealth of DarknessBatch Size: 5 US gallons
Efficiency: 70%
Estimated OG: 1.060 (we were a bit lower than this, though)
Target finishing gravity: about 1.009
IBUs: 69
Boil time: 60 minutes

Grain Bill
10 lbs Pale 2-row (85.11%)
1 lb Crystal 40 (8.51%)
8 oz Midnight Wheat (4.26%)
4 oz Chocolate Malt (2.13%)

Boil/Hops
2 oz Columbus (14.60 AA) at 15min
1 oz Nugget (12.20 AA) at 15min
1 oz Columbus (14.60 AA) at flameout
1 oz Nugget (12.20 AA) at flameout
1 oz Columbus (14.60 AA) for dryhop last 7 days of primary
1 oz Nugget (12.20 AA) for dryhop last 7 days of primary

Yeast: Safale US-05
Mash: 60 minute mash at 153 degrees F
Fermentation: 3 weeks at 68 degrees F
Bottling: It was ready to go after 2.5-3 weeks in the bottle at room temperature.

How would this go.

Replace the Columbus with Galaxy
Replace the Nugget with Cascade

But also add a 30 min hop of 1oz of Galaxy and Cascade

and add 1oz of Mosaic at 15min and flameout?

I found a similar chart but unfortunately I don't have the recommended substitutes.

That is why I posted on here to see if anyone had a suggestion or to see if the ones I posted would work.

Would Mosiac, Cascade and Galaxy work together?
 
They would go very well together.. just a hint of the Galaxy though..

dunno about in a dark man.. I tend not to brew too many dark beers so am not sure...

I do a black IPA with Citra and Galaxy. It's bloody awesome.

Final Gravity (FG): 1.013 (°P): 3.3
Alcohol (ABV): 4.91 %
Colour (SRM): 13.5 (EBC): 26.6
Bitterness (IBU): 85.7 (Average - No Chill Adjusted)

85.13% Pale Malt
8.51% Crystal 40
4.24% Midnight Wheat
2.12% Chocolate

1.3 g/L Mosaic (12.5% Alpha) @ 15 Minutes (Boil)
1.3 g/L Amarillo (8.6% Alpha) @ 10 Minutes (Boil)
1.3 g/L Cascade (7.8% Alpha) @ 10 Minutes (Boil)
1.3 g/L Amarillo (8.6% Alpha) @ 5 Minutes (Boil)
1.3 g/L Cascade (7.8% Alpha) @ 5 Minutes (Aroma)


Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Fermented at 18°C with Safale US-05

Hey Neanderthal,

I like the looks of your recipe. I've never heard of midnight wheat, though. I'm guessing it's a dark or roasted wheat?
