Hey guys

Back after a 12 month break and keen to get a brew on, just wanna check something.

Have got the following recipie wizzing around me brain, I was originally going to use dex or white sugar but was thinking about using honey instead...never used it and am wondering on the flavour

2kg light lme
1kg Amber malt (mini mash)
1 kg of dex or Honey????

Hopped with citra to about 35-40 ibu

As always any advise greatly appreciated

Honey is just about fully fermentable same as sugar as for flavour I can't tell, I can't taste it in Bees Knees.

Did read somewhere not to use eucalypt honey don't ask me why.

I think that if you want honey taste then add the honey after the first rapid fermentation has died down as the flavour tends to get stripped out.

I was planning of fully fermenting it, i dont want a full on honey flavour anyway...I guess ill give it a lash and see how it goes
