hi guys,
I'm thinking of doing a dopplebock this weekend but i have one small concern about the yeast i intend to use. I have made a starter of wyeast 2206 bavarian lager, but i remember reading on the smack pack before i opened it that it is suitable for beers up to 1.065 OG.
The beer I am planning to do is around 1.080 OG.
Does this matter? or should i select another yeast?
 
Keep stepping your stater up for those big beers. You want shitloads of healthy, viable yeast for a dopplebock.

FWIW I have just smacked a pack of the same yeast for a dopplebock. I plan to brew a tin of Coopers Lager made up to 12 litres with this smackpack and then dump that and ferment the dopplebock on the cake.
