Hi.


Anyone know if high rfructose corn syrup is fermentable?

I've added an A10 tin of dark cherries in high fructose corn syrup to my wheat beer, but when I test the ferment I only get 4.7% alc, and a baume of 1.3. (ie a potential final alc of ~6%)

(There was a kit and a kilo of wheat malt in the primary fermenter)

Should I leave it to ferment a few more weeks in a tertiary fermenter, or just let it settle and bottle?
 
I would love to know the answer to this question as I am adding some cherry jam to my next dark ale. I am using a brand that uses no added sucrose - just fruit juice - and I would like to know the fermentability of fructose.

Anyone???
