Help! total beginner trying to brew non alcoholic gingerbeer.

hi, I followed the instructions in the recipe etc, but I keep getting a yeasty taste. I've read up, and from what I've read, I'm not leaving it "brew" long enough, prior to bottleing, ( I leave it 48hrs) However, I'm concerned that if I leave it longer, it will turn alcoholic. my kids drink this, so alcohol is an absolute no.

any suggestions?

I'm using a simple recipe found online, ginger/water/sugar/lemonjuice and brewers yeast.

I was intrigued, confused and confounded by this thread at first.
In the New Posts page the title displays as "Help! total beginner trying to brew non alcoholic gin..."
Then Paddles goes on to say that he makes it for his kids.
Confounded I was.
 
you won't need to use brewing yeast at all if your plant works correctly
