I have no fermentation fridge, so temp control is out of the question, but I really want to put down a lager in a cold dank corner of my house whilst I swan around Europe.
Living in Melbourne, I know that temperatures will be pretty cold, but also damn inconsistent. I wouldn't leave a fermenter outside... but I would consider opening up a window and leaving the fermenter in my room (don't worry, a burglar would have to be pretty damn fit to get to my window! ).
Is this an okay idea? The room itself probably wouldn't dip and rise in temps as much as leaving it outside, right?
In any case... can I do a lager? Or should I be sticking to ales?
Are there any lager recipes that you have tried without fridge control?
