Welcome! Love ginger beer. What's your go to recipe?
I’ve made my own I start with 2 kilo of Ginger I peel it then grate it put in in a large pot of water on the stove boil the water then add 4kilo of brown sugar and 2 large lemons or 3 medium cut in 1/4’s I squeeze the juice first and then throw the peels in and I boil the mixture for about 15 minutes. I then add 15 litres of filtered water to the fermenter strain off the Lemons and ginger and put those into a sock to add in later. I then take the mixture and the sock with the ginger and lemon and add that to the fermenter give it a good stir then while that’s cooling off I add my yeast S04 into a half litre of water to let it hydrate then I add that to the brew. I test the alcohol strength every few days until I get around 5% once I have 5% I cold crash it by putting it into my fridge. From that point depending on if you bottle or keg it if I bottle it I add another 2kilo of brown sugar and stir it in let it sit for 2 days before bottling then leaving the bottles for 4 to 5 days to self carbonate were when I keg it I add the same amount of sugar but and add it to keg straight away and let the keg sit for 3 days before I tap it
