Hello peeps

I was hoping to brew a batch in the style of the Garage Project Cookies & Cream Ale. Could not find a recipe so was going to go with the Milk O Stout recipe from beersmithrecipes.com and add some vanilla bean paste in the fermentor. still need to work out how much and at what point. Any ideas on how much or how else to turn this recipe into Cookies & Cream?

Not a lot of biscuit (cookie) going on in there, maybe add some Victory or a medium Crystal to add sweetness or some oats to get a creamy body
 
Try writing to the GP brewer Pete Gillespie. A top bloke who gave a very informative talk on brewing with 'interesting' ingredients at the recent NZ home brewers conference. He seemed happy to share recipes/ ingredient ideas there so he might point you in the right direction.
