Hey all, im planning on putting a fruit beer down soon, i was planning on using mixed berries (blackberries rasberries etc), and having the majority of the malt/grain bill being wheat. Now id prefer to use a yeast i already have in stock. Which would you think would produce the nicer beer WLP565 Belgian Saison or WLP400 Belgian Wit? I was a bit worried the wit would turn out too tart?

Any thoughts?

Or should i just go and buy a hefeweizen yeast?
