Frozen Dry Yeast

Hi guys,

I found my packets of dry Yeast in the freezer after someone had moved them from the fridge. Will the Yeast be Ok to use still?

How long do you think they've been frozen for CArl?

freezing kils yeast because the water expands and ruptures the cell wall....but given that it was dehydrated yeast anyway, I would think that this wouldn't apply (?).

One way to tell, rehydrate the yeast and either 'prove' it, or make a starter with it. You'll soon know if it's viable. (but get a fresh backup packet first, in case it's a goner. ;) )

I keep all my dry yeast in the freezer. NEVER had a problem.

I don't for a wet yeast ie: I'm going to save the cake of my US05 on Wednesday in stubbies and fridge em until use. This way I will get four uses out of each stubbie... in theory I won't be buying yeast for months and months on end now.

Keeping dry yeast in the freezer is perfectly OK. Either that or half my beers get infected very fast with really good wild yeast.
