For those who haven't got the time to spend doing BIAB I highly recommend brewing a fresh wort kit. I recently grabbed a GMT+10 London Porter from Bacchus & fermented it with Nottingham. It's absolutely delicious!! Porter is one of my favourite styles & this one is honestly one of the best porters I've tasted

The other bonus - brew day took me a whole 6 minutes!

If you haven't done one, give it a go

Do you think it would be possible to add extra water to it if you didn't want a 6% brew.

Let's just say I wanted it at 4%. Could I add more water and perhaps do a mini mash and partial boil with spec grains and hops to account for the "thinning" of the brew? Just a thought.

Straight dilution would be fine - Personally I'd just drink a little less & enjoy it at full strength, it's truly a great porter (totally affiliated :))
 
what about diluting it only a small amount (or not at all), and using a yeast that is less attenuative than Notto - such as MJ Newcastle brown, or Windsor.. just an idea. That way you could knock the ABV down a little, without losing as much flavour

The Black Cat Wort comes in a 15L drum from All Inn Brewing Co. I turned one into an IPA and topped it up to 20 litres and once bottled was about 4.3%, no other fermentables.

(EDIT: not your typical IPA being only 4.3% but it was a C hop party nonetheless).
