My brother an I own a large cherry orchard (appprox 10,000 trees) located in Taggerty Victoria. We currently have a surplus of 3rd cherries (smaller than 22mm or with some bird holes/imperfections) that would be perfect for some cherry wine, beer or cider (or maybe even cherry brandy!). We made a cherry wine last year which turned out acceptable however my expertise lies in beer and cider.
Cherries have been washed with a light chlorine solution at approx 700 ORP. We have an existing buyer making cherry brandy who says he is waiting a few days before pitching the yeast whithout issues. You would definately find many cherries that are of first and second grade as well as the sorters often make mistakes
As you can appreciate this is a time sensitive add. Most of the cherries were sorted yesterday and we will have a lot more coming in today. They are currently kept at 1 deg C but due to the large volume of fruit we have coming in the next few days we may not have room for them. Approx sugar contents in the 12-15% range, they are sweet, just smaller or damaged - not many are really unripe.
