just about to drop my beer from the fermenter to the keg. ive taken readings during the brew - as i went to put the tube into the tap on the fermenter, ive noticed that mold has grown in the tap.

should i cyphon the brew? clean the tap and use it? should i turn the fermenter on the side and replace the tap??

Use a siphon if you have one.

The other two will only result in you losing a lot of beer all over your feet.

sanitize your tap after you take each sample in future.
if the inside of the tap is infected the horse has already bolted anyway,
I'd just sanitize the tap and use it then chill the kegs asap.
good luck

how do you clean the tap after a sample?

Just keep a spray bottle full of sanitizer like starsan handy and give it a good squirt up the tap when your finished.

Good habit to squirt in there before you open the tap as you could pull nasties in when turning it.

Cheers
