Does the drum have to be plastic to ferment for beer/mash or can it be an adapted metal tin with lock and tap? Wondered if metal may impart unwanted flavour/impurities - hence the use of plastic.

Commercial breweries typically use stainless steel vats for fermenting - so it definitely doesn't have to be plastic.

Not too sure about what other metals are OK for fermenting in - my brew pot is made from ally - which is not a problem, but don't know about prolonged exposure.

Someone else on the forum will be in a better position to know I am sure.
