Fermentation by day 4?

Hi all.

Ive just brewed a Morgans ginger beer kit and added 600 g sugar, 250g dark sugar, 400g honey and 750ml of the cordial. After a day the brew went nuts and i had to rrplace the airlock with a blow off tube. This happened for about 36 hours.
Now its settled down to looks like nothing so i took a gravity reading of 1002 just now. OG was 1040. Ill take another reading tomorrow but is it possible this has stopped fermenting? I was expecting it to be another 2 days at least. Has the added sugar speeded up the process when it went nuts? I used the standatd morgans yeast and nutrients.
Ive tasted it and it seems pretty good.
Its only my 2nd attempt at homebrew so hence the questions, my first attempt (morgans lager) are ageing in bottles now 8 days on.

I should add, that this was started Sunday Arvo. So only on day 4 really.
 
It's probably done at that gravity but just leave it for another day at least. I just did a 40L Wheat beer and it's done in 5 days.
