My sister has given me 800grams of frozen Elderberries that she grew & harvested recently, which I'll boil-up and cook with some sugar. Been reading about their possible toxic properties (cyaniding glycosides and alkaloids) if not cooked first.

I'm not sure what sort of brew I should use them in. Anyone used these in a brew before? If so, what did you use them in?

I was thinking something like a dark ale that can take the dark plum flavours of the elderberry.

Look forward to hearing from those who have used them in a brew before.

i haven’t used them but my brother inlaw uses them to steep/flavour gin, they didnt add plum like flavour to my liking, just intence bitterness.
 
I think they would be more suited to a sour beer rather than a dark beer, I have had the Titanic plum porter which is delicious but you would need prune juice concentrate to make that.
