would appreciate some feedback on the below taste bud stripper. Dogfish bro' since it will hopefully get done on waitangi day this side of the ditch. A hop mismatch, all i could get from the good ol us of a, and figured i'd use them all at once! Zythos is instead of amarillo.
Wasn't sure how to handle the constant additions in brewmate, so put them all in as 30min. Will be spread from 60min to 0min, and figured if it comes in less than 150 ibu it will be ok, and anymore than150 ibu, well apparently over 100 doesn't make any difference??

Is this supposed to be a clone of a specific Dogfish beer or just inspired by them?
 
couldn't clone as no amarillo, so i guess a dogfish inspired brew
 
So what is the connection to Dogfish Head?

I suspect that 180 g of mid-alpha hops at 30 minutes will make a 1.056 beer way too bitter.
 
He mentions how the additions won't actually be at 30 mins twice in the first post.
 
my two cents..

get rid of the crystal and the wheat. unessary and not in any clone recipes I've seen. pale and Amber is a consistent theme across the 60, 90 and 120 min IPA's. Push the OG to 1064, drop the amber to 200ish. there is more amber in the bigger beers but the little one, 400g amber will muddy the flavour profile too much. its there to help boost the malt not dominate the hops.

Up the OG and DO NOT use Nottingham! It will strip all the hop aroma and flavour. Keep the amber and lose the rest. Don't use the Zuthos but if you could get Columbus or Citra to replace the zythos that would be better.
I would defiantly go to the effort of using a liquid yeast on this one, I mean hey, your spending cash on hops so why not get some 1272 and make an unforgettable brew?

Ok, 200g amber and no wheat or crystal.
Fr e yeast cannot get any liquid yeasts at this notice.
Have either Nottingham or s04 English ale, which would be best.

hopefully the flavor will last well this way. Figure my ic has been a bit too rapid, so this time will turn the cold water off for 15 mins once the wort gets to 80c and get a prolonged hot w.pool.
 
I only asked because I think the gravity and bitterness levels are worlds apart and most likely won't be great. I would up the gravity or drop the bitterness. I think Virgin Brewers' recipe from MHB would be something to aim for. I love hoppy beers so do what you want with the hops, putting them all in after 30 mins works well in an IPA.
PS. I agree on turning off the chiller but I do it at 70 degrees, whirlpool and let the wort settle for 20 mins and then pump through a plate chiller to the fermenter.

See what you mean razz, but am still not sure if telling brew mate all at 30 mins is same as continuous additions over 60min.??

Also, anyone have suggestions on Nottingham vs s04 ?

No, it won't be the same, but it would be interesting to see the difference in two beers made with the 60 min hop bursting v's your schedule. I've always used US05 or Wyeast American II for IPA's, not sure on the effects of Notto stripping flavour but more than one person has said it before.
 
Right, 2nd crack, found a bit of columbus, so canned the zythos, and raided the yeast farming dry malt since i have no liquid yeast / need for starters anyway.
Will add the whirlpool and dry hops to end of the recipe in due course, but for the continuing hopping regime this looks better i think? I guestimated the AA of the blend of centennial simcoe columbus by just a straight average, should be close?

Will go woth S04 english ale yeast.

While Columbus is largely considered a bittering hop, it's also a great aroma and dry hop. I would round off your dry hop with some Columbus for the end to end trifecta.
 
Tasted after 5 days and got to say its pretty good so far.
No more Columbus, so Dry hopped with 25g of each of simcoe, cascade, and centennial.
Will cold crash at weekend and fine, bottle weds next week I hope and start counting down to cracking the first bottle.
