Put a brew down on Saturday with lots of fermentables. About 6kg. Followed the recipe, calibrated the tilt, chucked that in, lid on all sealed up and see that the OG is about 30 too low. Wait and see what's happening until Sunday, then using sterilised tongs get the tilt out recalibrate, check gravity with hydrometer and refractometer and yep tilt is measuring correctly. Put it all back together and realise that I haven't mixed it up properly.

So what happens now? Will all the stuff ferment, should I stir it?

Cheers. I'll let it be for a little bit and if I get antsy I'll stir it up.
 
If you don't stir it now, don't stir it later either. Even now is probably a bit late, although it sounds like a big beer so it might not hurt it.

It's good to stir it just before or after pitching yeast, but once it's fermenting you don't want to introduce oxygen. It just leads to off flavors.
