Last week I brewed a hefeweizen with wyeast 3638. The beer looks like being a top notch effort, and my first decoction mash was a success.
What I wasn't prepared for was that 3638, which I haven't used before, is a genuine top cropper. Fermentation seems to be over - no change in reading for a couple of days - and there is only a bit of sediment in the bottom of the fermenter and one hell of a floating yeast cake on top.
Normally with hefeweizen I don't bother with secondary, and just keg/bottle from primary, then bottle the yeast cake for later washing & re-use.
Having never used a true top cropper before, what is the best way to deal with one for re-use? Rack from under it and bottle/keg from another vessel, or sanitise a spoon and container and harvest it first?
