Dark Candi Syrup - 400gm Leftover

I like the idea of a doppelbock but not sure about the yeast - is it silly to try such a strong lager without a stir plate?
I have a 3L flask but that's it.

Edit* nvm I can just make another lager first then chuck it on top :)
 
I did my doppelbock with 4 packs of W34/70... Its a cracker
 
I have a 1kg tub of dark candi syrup to make a Tomme Arthur’s Dubbel, but only need 600gm

Does anyone have any recipes/styles for the other 400gm that you would recommend?
I can dig out a couple of UK historic recipies if you'd be interested , the ones that use candy are , around the 22-25 lbs/ brl mark ! (Sourced from northern UK historic brewing ledgers), cheers , edd
 
You can cover, keep in the fridge and use later (months later). If paranoid, add some water, stir and bring to boil before use.

You’ve gotta get yourself a stirplate! Pays itself off pretty quickly and you’ll wonder how you managed without.
 
I've also got about 300g of amber candi syrup. I I was thinking of a strong scotch ale or even adding a touch to a mild to get some good caramel flavours.
