Ok, please no judging becasue I think i have made a big mistake. I mashed up an octoberfest style wort the other day, when I checked the specific gravity at room air temp it came in under my aimed SG. In my (drunken) panic I added some plain sugar and some corn maize from the pantry to up the SG. I'm not talking about cornflour that is white, and I'm not talking about the corn flakes sorta thing you get from the home brew shop either. When I awoke the next morning I thought to myself "I think that cornmaize needed mashing to get the sugars out" yeah?

Yeah.

If you got some enzymes from your HBS, it would convert it in the ferment, but you would end up with thin no-carb beer. That is only worth doing if you did not contaminate your beer anyway, starch is bacteria food, not yeast food.
