Coopers Kit yeast bitterness

Hi

I made a standard Coopers Amber Ale (Family Secret) with kit yeast - as the last batch I did went off from recovered yeast and I needed a guaranteed brew to fill the gap otherwise would run out...anyhow the first time in a long time I used a kit yeast and it has a bitterness (that I used to query) that is back - so I can only assume that it is the kit yeast is the culprit. It is not very bitter but is definitely a little more bitter than I have had using US04 US05 and BRY97 etc .... As far I was aware the new Coopers Premium Kits is supposed to be a premium yeast?

Can anyone confirm or is it the Amber Ale?

PS this the one of the first pours from keg - so maybe a bit of bitterness from the bottom trub, still clearing?

Its been a few years since I've used their kit yeast but It used to be great. I made some great All Grains with it.
Under recognised. I think its because its most likely been under pitched if only throwing in a dry pack without temp control in the majority of first time kit brewers. I always built it up or at least activated in a starter to match correct pitching rates. From memory their gold pack is only 7 grams?
Its fruity, high attenuation. Got some great low final gravities with it.
 
I don't know why there is this misconception that Coopers kit yeasts (there are several blends) are somehow inferior, as opposed to the likes of S04 etc. simply because they come from under the lid of the tin.

They are beer yeasts, they do the job and they are just a strain among strains. If anything they don't lend a lot of flavour characteristics as they are supposed to be "forgiving" when used in a number of brews.


I believe they are Mauribrew yeasts from Toowoomba. As with Dan, I've had good results especially with dark ales.
I've also used Mauribrew lager yeast as it's the yeast under the lid of Morgans lager kits, and it does a good job as well.

Could be the case. I'd have a couple of pours/ drinks before making a final judgement. Personally I don't think it would be the Coopers yeast if the bitterness stays. Did you use the recommended 1kg light dry malt?
