I made a standard Coopers Amber Ale (Family Secret) with kit yeast - as the last batch I did went off from recovered yeast and I needed a guaranteed brew to fill the gap otherwise would run out...anyhow the first time in a long time I used a kit yeast and it has a bitterness (that I used to query) that is back - so I can only assume that it is the kit yeast is the culprit. It is not very bitter but is definitely a little more bitter than I have had using US04 US05 and BRY97 etc .... As far I was aware the new Coopers Premium Kits is supposed to be a premium yeast?
Can anyone confirm or is it the Amber Ale?
PS this the one of the first pours from keg - so maybe a bit of bitterness from the bottom trub, still clearing?
