Id like to know how to make a cider.

I have:

30kgs of grannies
15 kgs of red delicious
15 kgs of pears

Can I just juice them and add an ale yeast?
 
Sort of. I think you'll also need some yeast nutrient.

You'll also need to wash the apples to get any pesticides, pollution, general crud off them. Also you may need to kill off wild yeasts that may be living on the apple skins that will get into the apple juice. Can't remember exactly what it was that can be used to do that tho. Might have been campden tablets

Yeast type depends on what sort of cider you want to make - sweet or dry?

Peel and core fruits before juicing.
 
Juice - them - but leave some of the grannies so that u can core them and slice them un peeled into the primary - approx 8.

Will need yeast nutrient..
Yeast - dry cider - Champagne - yuk - very dry and thin., or wyest dry cider yeast.
- sweet cider - use msweet mead yest or Pinot Nior wine yeast.
Heat the juice to 80C for 10 mins to kill off bugs - u can boil = but will loose some flavour.

Optional;
some honey and or hand ful of cascade ...
