I have heard many people on this forum mention a William Tell Cider Kit does anyone know any where in Brisbane that stocks this kit or is it purely an interstate kit. Also is it true that cider generally takes longer in primary fermentation than beer?
 
Yep - cider in primary i usually primary for 4 weeks and secondary for 4 weeks.

Adding apples (Granny Smith approx 8 whole) cut into 8ths directly in the primary/secondary also helps.

You can eat the apples with Ice Cream afterwards.
 
I usualy make the black rock cider kit with 6 litres of apple juice, a kilo of raw sugar and drop the volume back to 19 litres or so. With a bit of yeast nutrient, primary usualy only takes 1-2 weeks, then i secondary for a month in a keg
