Hey guys it's been a long time since I've cooked on the webber and my memory is really rusty.

I used to cook pork scotch/neck, rubbed in olive oil and seasoning. From memory I used about 16 heat beads in either tray and cook for about 1-1.5 hrs can anyone give any pointers ?
 
Fill both trays level with heat beads (one full lighting chimney)

Do not use time as your guide, internal temperature is the go (65 to 70 deg C) measured with a meat thermometer

Weber kettles are the best way to cook pork roasts

Crackling is perfect with beer

Also, rest the meat after you take it off wrapped in foil and a towel for about a third of the cooking time
