Anyone done a Coopers Canadian Blonde with Coopers Liquid wheat extract?

Not specifically, but my first Dr Smurto Golden Ale was his extract version...a can of Coopers LME combined with a can of their wheat LME. They went so well together I put wheat LME in every brew I do these days.
Those two cans together in 21 litres, with some dry hopped Nelson Sauvin (and maybe some Cascade, but at least the NS) would give you a Fat Yak style 5%abv (bottled), 25 IBU session swiller that might go alright.
